SMTP protocol logging via Exchange Shell

On receive connector:

Turn it on – Set -ReceiveConnector <ConnectorName> -ProtocolLoggingLevel Basic

Turn it off – Set -ReceiveConnector <ConnectorName> -ProtocolLoggingLevel None

To change the send connector use the syntax above replace “ReceiveConnector” with “SendConnector”
